Beef Carpaccio 
Thin slices of raw beef, usually made with tender filet mignon, 
I also use "ripe" top-round beef cut against the grain 
cooked in lemon and Extra Virgin Olive Oil 
on a bed of lettuce with shavings of parmesan cheese

6 oz of Top-Round USDA Choice
EVOO & red vinegar dressing 
salad and Parmesan shavings $3.25
